I made fudge last night. I was pleased to be able to use my new candy thermometer. But, the damned thing was broken. About 1/3 of the coloured liquid was stuck at the top with the other 2/3s at the bulb end where it belongs. Phooey. So, I had to use the cold water method - drop a small amount of the boiling fudge in a cup of icy water and see what kind of ball forms. Well, it never really formed any balls, but I think I got it right, 'cause the texture of the fudge is pretty good. I overbeat it, so it suddenly started to set. It still tastes good, even if it is a bit lumpy. BTW, this was mocha fudge, so I used strong coffee, not milk. The buttery/creamy taste comes from the butter in the recipe.

I have seen a candy thermometer made of metal with a dial on top, like a meat thermometer. You might want to consider one like that - at least you won't come across the same kind of problem.

Yeah, I was looking at one of those when I bought the other one. But, it cost almost three times as much and we're broke at the moment. Definitely the kind I want when I have more money.
